PDO LEGISLATION

CERTIFIED EXCELLENCE
Taleggio was assigned the Designation of Origin (D.O.) following the Italian Presidential Decree issued on September 15th, 1988, and the Protected Designation of Origin (P.D.O.) following EC Regulation n˚1107/96.

In the capacity as PDO cheese, it may only be produced in specific areas and using the milk of cows from farms located in the same areas and registered in a specific monitoring system.Therefore, PDO Taleggio may strictly be produced in Lombardy, in the province of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Monza-Brianza, and Pavia;
in Piedmont, in the province of Novara and Verbano-Cusio-Ossola; in Veneto, in the province of Treviso.

 

CONSORTIUM COMPOSITION

In its 40-plus year history, the Consortium has involved a growing number of parties: today, its members include 25 cheesemakers, 21 cheese agers, and over 80 companies in the capacity as users of the trademark applied to the Taleggio packaging.

It is necessary, as far as possible, for the consortium to check all labelling.
