THE CONSORTIUM
IT'S HIP TO BE SQUARE
Too good to not be imitated. The Consorzio Tutela Taleggio was born in Crema (Cremona) in 1979, following an agreement made by local producers to protect the cheese from being imitated.
This agreement has led to the Protected Designation of Origin (PDO) certification by the European Union in 1996.
LIVE TRADITION
The Consortium performs numerous activities to safeguard and promote the Taleggio:
- Activity to verify the appropriate use of the designation and product compliance;
- Promotional activity at the national and international level;
- Technical support for cheesemakers and agers;
- Food education;
- Research activity in cooperation with universities, research centers, etc...
- Cooperation with the ICQRF (Italian central inspection institute for the safeguard and fraud protection of food and agricultural products).
THE TRADEMARK
SAFEGUARD TALEGGIO AND TERRITORY
Four circles and four Ts engraved on the rind. This is the trademark certifying the product’s authenticity, and that the wheel has been made fully in compliance with the technical standards and production guidelines.
The fourth circle hosts the serial number assigned by the producer.

Moreover, its packaging bears the four-leaf clover logo to distinguish the original product at first sight.
PDO LEGISLATION
CERTIFIED EXCELLENCE
Taleggio was assigned the Designation of Origin (D.O.) following the Italian Presidential Decree issued on September 15th, 1988, and the Protected Designation of Origin (P.D.O.) following EC Regulation n˚1107/96.
In the capacity as PDO cheese, it may only be produced in specific areas and using the milk of cows from farms located in the same areas and registered in a specific monitoring system.Therefore, PDO Taleggio may strictly be produced in Lombardy, in the province of Bergamo, Brescia, Como, Cremona, Lecco, Lodi, Milan, Monza-Brianza, and Pavia;
in Piedmont, in the province of Novara and Verbano-Cusio-Ossola; in Veneto, in the province of Treviso.
CONSORTIUM COMPOSITION
In its 40-plus year history, the Consortium has involved a growing number of parties: today, its members include 25 cheesemakers, 21 cheese agers, and over 80 companies in the capacity as users of the trademark applied to the Taleggio packaging.
It is necessary, as far as possible, for the consortium to check all labelling.
